Fruit & Vegetable Preserving Technology ::

This technology has been devloped by Prof H M Chawla of Department of Chemistry IIT Delhi. This R & D work has been supported by of Ministry of Science & Technology; Ministry of Enviorenment & Forest; Ministry of Food Processing; and Ministry of Rural Development. This Technology consists of preparing a liquid coating/ wash from naturally occurring substances on the application of which the fruit & vegetable shelf life is considerably increased without the need of refrigeration. Such a coating allows controlled flow of oxygen unlike wax coating, which stops it altogether. Various grades of coating is prepared for different fruits & vegetables. During preliminary Studies it has been found that the coating is extremely helpful in extending the shelf life of apples, grappes, oranges, strwberries and pears etc. at room temperature without refrigeration. The Project Monitoring Committee of Govt. Of India had desired that some field trials should be made in association with HPMC, APEDA & Non-Governmental Organisations like the IDC Foundation.
